MSC - Zucchini Spice Cupcakes


Welcome to Martha Stewart's Cupcake Club - second recipe. Today's recipe was picked by Tracey of Tracey's Culinary Adventures Tracey always writes a great post and her photos are beautiful. Her blog is one to check out regularly.

As you can see from my photo, I thought these cupcakes were an excellent breakfast option. I loved them crisply toasted with a good smear of jam.

I did tweak the recipe. Rather than the usual cinammon/ nutmeg/ cloves spice combo, I went with a good teaspoon of mace, a shake of cloves and a whole grated lime peel. I thought this worked well with the zucchinis. Then I panicked that the family wouldn't eat them, so instead of walnuts I used a judicious handful of chocolate chips, enough to whet the children's appetites, not enough to ruin my breakfast.

Zucchini cupcakes will never make it to my regular recipe rotation, but once in a while it's good to be reminded that a pastry dessert can be healthy.

  3. Breakfast fare...I never thought of that! They look great as breakfast fare. Happy to hear the kiddos would eat them as well. You spoil them throwing in those chocolate chips! Great subs going on here.

  7. HAHA! A healthy breakfast option with this recipe sounds like the best idea yet!

    I love your tweaks because I also tweaked mine. It's all about using what you have! Love the tops of your cupcakes.

    I didn't care too much for them since I like my cupcakes super moist. The work guinea pigs inhaled them. I guess they are not that particular! ;)

  24. Lovely baking! I love the idea of toasting the cupcake and adding jam. I've got half of the cupcakes waiting in my freezer. May have to pull them out one morning for a before-school breakfast treat for the family. Great idea!
