TWD - Mocha-Walnut Marbled Bundt Cake



Oh, Bundt Cake. That most delicious of pound cakes. Dense, moist, rich - all the desired attributes of a cake that needs no icing.

I've baked this recipe before and it disappears right away. This time, I used crushed hazelnuts and their flavour was a little more subtle than walnuts would have been. The mocha is made with coffee, espresso powder and chocolate. It balances nicely with the nuttiness of the rest of the cake.

Well, I finished week 1 of Weight Watchers. What an unheaval for me. I've never eaten so much food. I'm used to eating small things, like cupcakes and squares of chocolate. Now, I eat huge bowls of salad, cupfuls of carrots and broccoli. Three cups of popcorn! I can barely eat all my per day points. It's been a struggle. At the end of the week I'd lost 6.6 lbs. I know most of that was probably water, but such a huge number has given me a great morale boost. I needed that to continue this week. Also, I've been getting on my treadmill and walking more every day. I feel great.

I rewarded myself with a new toy - the Cuisinart food scale and I love it. I'm really enjoying seeing what 4oz of meat looks like or 8oz of pineapple. Heck, I've weighed everything but the cat. I just can't lift him off his chair.

  5. Woo hoo! That's a great first week on WW. It is a bit strange thinking in terms of points, but I'm used to it now. Did you find the online tools? They help a lot. BTW, assuming 18 servings, this cake has 7 points. I think I'll only be taking a bite.... Yours looks yummy! And I love the cake plate.

  8. Great jon on the WW..keep it up and keep on exercising! Im in the process of helping one of my teen daughters get into exercise and it's not easy. She is lazy! So far she has been faithful for a week now!

  9. Dieting is always difficult, but the good part about WW is that at least you can bake the cake and eat some of it too without feeling very guilty ;)

  19. Your cake is gorgeous! Beautiful marbling! And congrats on the AWESOME first week of WW!! Isn't it crazy how much food you can eat? I started with WW last June and am now just a couple of weeks from Lifetime. I love the program - it definitely took some big changes, but what I like about it is that at the end of the day there is room for everything in your diet, including awesome cakes like this one. You are rocking the program already - go you!
