TWD - Quick Classic Berry Tart


I want to celebrate every Mother's Day with the Classic Berry Tart. It was the perfect Springtime dessert. And, as Dorie said, very simple to make. Especially if you prepare the ingredients ahead of time.

The crust was a light cookie. Next time I'll spread it thinner, but I was afraid to press too much and lose the crumble. The pastry cream was not too sweet. I made the vanilla and then grated about half a teaspoon of frozen ginger into it. The fruit was a sampling of my entire kitchen. For the glaze, I used half a jar of last summer's apricot freezer jam.

Every bite was like a new pie, with a different fruit and the ginger custard adding zesty flavour.

  20. Exquisite tart!!! It looks wonderful with the fruit arranged in a circular pattern! I rolled my crust - but now want to press (lightly) as you did and see what results that brings - it looks like it was a big hit!
