TWD - Tender Shortcakes
Hail to Spring! It's the time of delicate berries and tender shortcakes. Here's a recipe that can be done in minutes and frozen until the berries are ripe.
With minimal ingredients - flour, baking powder, sugar - mixed until they just hold, the biscuits came together easily.
I used blueberries and lightly cooked them with sugar to create a syrup without exploding all the berries.
The shortcakes themselves were light and flaky and not-too-sweet. Delicious with blueberries and a dollop of fresh whipped cream.
