TWD - Oatmeal Breakfast Bread

It was love at first bite. This cake was so moist and airy I was taken back to a childhood honey cake that I loved. I immediately started to think of all the possible substitutions for the apple sauce. Definitely pears. Probably yams. Or half and half of any of these purees with honey.

For dried fruit I used figs. I liked them but wished I'd used something that stood out a bit more like dried cranberries. Maybe if I'd included some nuts.

This is a great every day quick bread/ cake that I will make often. Natalie of Oven Love chose the recipe. Please check out her blog. She made adorable muffins.

This week's photo was posed by my lovely and helpful daughter.

  1. Ooh, now you've got me wanting to try this recipe with pumpkin for all or part of the apple sauce. Mmm. =)

  2. Someone else used applebutter instead of applesauce. I never thought of the substitutions for the applesauce before. I just love TWD because so many bakers, like yourself, bring out so many great ideas I would never have thought of. Great photos of your bread!

Hope your banana version turned out well. You could always frost it with ganache! ;)

  11. Your bread looks wonderful. I was curious how you staged baked goods in your garden. I love dried figs, maybe combined with something tart?

  17. What a beautiful photo. I truly love sunflowers. I've used my sunflower plate in an earlier blog photo, and your flower brought such beautiful color to this shot. I'm looking forward to trying this recipe, although I may make it into muffins rather than a loaf. There's something about a loaf that makes me want to eat the whole thing!
