TWD - Coffee Break Muffins
Best muffins ever! Does anything else need to be said? Substituting a good strong cup of espresso for the liquid in this recipe is genius. Toss in some mini chocolate chips and the family comes running. I made a topping of whole rolled oats, brown sugar and butter to give the muffins a nice homey appeal. Perfect with a hot cup of tea.
I made them again this past weekend. I used my mini muffin pan and left out the chocolate chips. I dipped the tops into the mocha frosting I had left over from my Banana Cake with Mocha Frosting and Salted Candied Peanuts and added a candied peanut. I took these Espresso Bites to a dinner party and they were a hit.
